This ideation event will bring academia and industry within the plant-based value chain together

The theme for this event is From Side Streams to Nutritious Ingredients for Plant-Based Foods.

We will give inputs for KMCs challenges and also work i groups to identify other challenges and ideas within the theme for Plant2Food projects.

This ideation event will bring academia and industry within the plant-based value chain together and provide optimal settings for stakeholders to discuss and co-create on novel research projects which you can apply for funding via Plant2Food.

9.10 From side stream to nutritious fiber, KMC, Line Bach Christensen, R&D Director

KMC produces potato starch and has done it for many years, but what about the pulp? Potato pulp is a side stream from potato starch production, and it is a fiber with a big potential. How can it add value to plant-based products?

9.40 Side stream challenge and balance as nutritious ingredients for plant-based foods, University of Copenhagen, Vibeke Orlien, Associate Professor

Side streams may contain nutritious compounds and can be processed into valuable food ingredients. However, addition of side stream ingredients can be a balance between techno- and bio-functionality.

  • How can you support a project idea within this area?
